Breakfast is my favourite meal of the day. I love making big meals to start my day off with good energy and a full tummy. For the days when I have less time in the morning or if I fancy a cold breakfast, granola is my favourite. Problem with the once you by in the supermarket have so much sugar, and that’s including some of the healthy promoted brands. Instead I decided to make my own! This recipe has a good mix of healthy fats, plant based protein mixed and good carbs that will kick start your day.

Homemade Granola
150 g of barley flakes
2 tablespoons pumpkin seeds
2 tablespoons sunflower seeds
2 tablespoons raisins
1 tablespoon cinnamon
2 tablespoons almond butter
2 tablespoons honey
2 tablespoons of date water
(leave a handful of dates in a small cup of water overnight)

Directions
Preheat the oven on 160 degrees. In a small pan add almond butter, honey, date water and salt. Place on the stove on low heat for 5-10 min until it’s melted together. Put to the side and let it cool down. In a bowl add all the dry ingredients and mix together well. When the sauce has cooled off, pour a bit into the bowl with the dry ingredients and mix. Keep pouring bit by bit in until it’s all mixed well together. Spread the granola mix out evenly on an oven try with baking paper. Put in the oven for 15 min, then take it out and toss it around. Put back in the oven but change your setting to fan and bake for another 10-15. Keep an eye on it now and then for the first part so you don’t burn it. When it’s baked, take out and let it cool down fully before storing in a glass jar. Enjoy!
