Having something sweet during the coffee break is a must for many. This healthy banana bread is defiantly worth making and would be appreciated by everyone. Healthy eaters or not. It´s super simple to make & super delicious. Finding a banana bread recipe with the right texture has been a mission of mine and finally I have created one that´s ticking all the boxes. This free from recipe taste as good as any banana bread you would get down by your local cafe.
Gluten Free – Dairy Free – Refined Sugar Free
Ingredients
2 large overripe bananas (around 260g)
1 1/2 cups gluten free flour
1 tsp baking soda
1/2 cup nut mylk
1 tsp cinnamon
1 tbsp honey
2 eggs
1 pinch of salt
Method
- Start by preheating the oven to 160 degrees
- Mash up the bananas in a bowl
- Add all the ingredients except the eggs. Combine the mixture well with a whisk.
- Beat the eggs and add to you mixture. Blend it all together
- In a bread tin, add some baking paper and pour in your mixture.
- Extra: sprinkle some cinnamon, coconut sugar and cacao powder on top for a delicious coating
- Bake in the oven for around 40-45 min. Poke the bread with a fork and make sure there is no sticky dough on it once you pull it out
- Take the banana bread out of the oven and out of the tin. Let it cool off on a cooking rack so it stays crispy underneath and preventing it from going soggy.
Enjoy your bread simple as it is or top it up with nut butter.
