If you like a warming curry, then this recipe is for you. It’s a milder one that has fresh flavour to it which works perfect with a white fish.

Ingredients
2 Cod fillets
1 can coconut oil
1 cup of chopped spring onion
1 small broccoli
300g dwarf beans
1 lime
1 inch ginger
2 cloves garlic
2 teaspoons turmeric
1 teaspoon cumin
1 handful of fresh basil
2 teaspoons fish sauce
1 stick of lemon grass
Salt & pepper
Coconut oil for cooking
Directions
- Preheat the oven on 175 degrees
- Heat up coconut oil in a pot on medium heat
- Add chopped spring onion, grated garlic and ginger. Cook until soft.
- Toss in all spices in the pot with fresh basil, roughly chopped lemon grass, fish sauce and a dash of water. Stir carefully to create a thick paste.
- Last pour into one can of coconut milk. Let it cook for roughly 10 min
- Place the food in an oven tray with dwarf beans and broccoli.
- Pour the curry over the fish and vegetables. Make sure every bit is covered
- Place in the oven, in the middle for 30-40 min
- All done! Serve with brown rice, cauliflower rice or spiced up sweet potato mash
