The perfect muffin to have ready for those busy mornings. Delicious flavour, filling and nourishing. Taste similar to carrot cake but not as sweet and the touch of orange gives a fresh after flavour. The recipe gives around 8-10 muffins that you can store out in a dry place.
Gluten Free - Dairy Free - Refind Sugar Free
Ingredients
1 1/3 cups gluten free flour
½ tsp. baking powder
1 cup grated carrots
1 apple
1/3 cups milk of choice
1 egg
2 tsp. coconut oil
1 tbsp. honey
2 tsp. cinnamon
1 tsp. vanilla
Touch orange zest
1 pinch of salt
Method
- Start by preheating the oven to 175 degrees
- Peel the apple and cut it into pieces. Place in a pan with water and let boil for 10 min.
- In a bowl, combine all the dry ingredients
- Once the apple is ready, place it in a blender with the wet ingredients and mix together.
- Pour the liquid into the bowl mixture and add the egg that has been whisked separately. Combine it all together
- Prepare muffin cups and dived the muffin mixture into them.
- Place in the middle of the oven and bake for 20-25 min.
- Enjoy as they are or serve with some coconut yoghurt
Tips: Add some walnuts on top before baking for yummy crunchy texture
